Potato Spinach Souffle

            Ingredients:

450 g spinach (frozen)
2 onions,
2 cloves of garlic
100 g mushrooms,
500 g potatoes,
5 eggs,
salt,
pepper.

           Preparation:

Boil potatoes in their skins.
Thaw spinach.
Onions and garlic peel and finely chop.
Wash the mushrooms and cut in half.
Cook onion in 3 tablespoons oil.
When almost done, add the mushrooms and fry a few minutes longer.
Meanwhile peel the potatoes, cut into small pieces and mix with onions and mushrooms.
In a pan add garlic and spinach Calima you Calima minutes.
Beat them oulalele foam and add spinach.
Gently mix spinach with potatoes.
Season with salt and pepper.
Put everything in a pan greased with butter (oil) and give the oven for 30-40 minutes.
Serve hot.
